Hey,

Launching on the MFS this weekend (the stars aligned). One of our chefs would like to fix chilaquiles for breakfast on a high mileage day. Anyone have a good, quick, and easy recipe? Meat would be cooked on the side.

Mmm stale and soggy chips for breakfast...I got nothing but seems to have all the same ingredients as every other Mexican breakfast, I can't imagine it would be difficult.

Quick and easy, yeah, I'd just toss salsa and good corn chips (Juanitas or Josefina's, don't ever buy Mission/Tostitos/Santitas..yuk.) in the dutch oven and steam lightly.

Juanita's have enough oil/crisp to them that you wouldn't need to fry them first, just steam them softly. Warm the beans/meat in another pan, quick over-easy on the eggs and serve together.

Precook the meat and salsa, bring in a vacuum bag.


For a layover, I'd go more complex and truer to the original, but on a high mileage day, you just want the calories in the bellies and get the kitchen cooled and packed so you can launch and make the miles.

Start w corn tortillas.

Cut into strips and leave out in the air overnight.

Heat skillet with oil

Toss in semi dried tortilla strips

Toss in oil until golden brown

Pour in mixed eggs until you've got about what you want

Add cheese until melted, add canned hatch green chilis

Serve with sour cream and salsa.
