I went backpacking in the maze this November and its pretty awesome. There's a cool loop you could do where you would hike along the canyon rim heading upstream to the confluence and then head away from the river through water canyon, finishing up by hiking back 3 miles on the road. You could also hike from the doll house to the harvest scene which has a bunch of really cool Anasazi paintings that are about 3000 yrs old. Either way, you should get a national geographic trail map of the maze so you can properly plan it out. Have fun.
