How much gradient does a single gray topo line represent?

I can't find it on the legend

It's not in the legend. It's usually bottom center on the white "info" part of the map. If you can't still can't find it, count the lines between listed elevations, i.e. 5 contour lines between 10,000 and 11,500 means each line is 300'.

find two labeled contours, count intermediate contours between labeled ones, divide, conquer!!!
