That sounds like a great idea, but the kit is a vastly different size for 1-2 people vs. a family of four vs. a party of 8-12.
I ended up building a couple different kits. The basics are the same, but where I have a single cup drip coffee maker in my solo kit, I take an 8-cup perc for camping with my wife and have a 1.5gal kettle for groups.
Same with frying equipment...8" skillet -> 12" skillet -> 24" griddle
For a fast and light car camping trip, I wouldn't take dishes for 12...and so on.
