Sure thing-but not too much of what I do can be cooked ahead. The verde enchies could be frozen completely in the shape of a dutch for a heat and eat, but I like to cook out there so don't mind doing some extra KP while I am downing some gintonics.....
We had salad and/or fresh veggies with every meal too..
Night one: fresh ahi (in a wasabi bread crumb mix) night one with coconut rice and asparagus.
Night two: chicken breasts pan fried then topped with a shallot, garlic, wine mix topped with mozza and fresh toms ( finished in the dutch ) served over pesto pasta.
Night three: NY steaks on the grill with a quinoa recipe I tried. with green beans. It was damn good.
Night four: pork chili verde enchilladas in the dutch. I did a homemade verde sauce for these and cooked the pork shoulder long and slow from an Emeril recipe. So fffing good.
Night five: grilled teri chicken with sesame rice noodle vegie mix.
Night six: prime rib on the grill with bakers and cole slaw.
Damn. too close to lunch. hungry now.
