For the hiking get Matt's book.
The Middle Fork of the Salmon River - A Comprehensive Guide published by Idaho River Publications
I don't use it for the rapids but it looks good. Best hiking guide to the Middle Fork country ever. Besides the obvious major drainages there are tons of overland hikes, drainage to drainage, the Pine Creek hike, up and over Waterfall Creek and just about any place you look on the river ( Parrot Placer ledges for me) that you look and wonder 'How hard would it be to get there?' and Matt has done it. Funny enough we both have worked the river for years and Matt and I are buddies but have never done the MF together.
I know a couple of outfits that do commercial food. One gal here in town does it for a couple of companies and the folks at The River Company in Stanley are doing a raft rental and food side to their business.

Not sure about their food but Dave seems like a nice guy. I have shared the boat box with him a few times. He takes his day trip guides out for a multi day guide trip every year and seems to run a good show.
