Breakfast: Tamale Pie- canned black beans, corn, diced green chile and tomatoes; cornbread mix; egg beaters; pre-cooked sausage crumbles (or pre-cook yourself and vacuum seal); cheese- throw it in the dutchy.
Pancakes and Bacon- get the jugs of just add water mix and pre-cooked bacon
Lunch: pasta salad- egg noodles (cook with breakfast), canned olives, artichoke hearts, garbanzo (or?) beans, summer sausage, string cheese, red bell pepper, italian dressing
Thai Chicken salad- canned chicken, thai dressing, celery, peanuts, pita bread
Dinner: Lasagna- oven ready noodles, marinara, mozzarella, ricotta, pre-cooked sausage (vegetarian lasts longer)- DO
Take everyone's leftovers and get creative!
All of these are tried and true for the last days of a superhot GC trip. Cooler management is key, but cheese lasts a long time in "average" temps and so does cooked or smoked sausage/bacon. Besides, all Powell had was "moldy flour and rancid bacon" half the time.
