Food Tips

We are hitting the Main Salmon in sept. and are looking for tips/ suggestions for packing food. Thanks for your help

When? First of September can be very hot. By end of September it will be almost fall like.

Makes a difference.

Do you have good cooler setups? How many people? How many coolers? Kids? Super simple or do you want fresher meals with a little more work?

Maybe you already have food planned and just want 'packing'.

I am looking for packing tips. Things like putting eggs, pre cracked and seasoned in soda bottles. We are putting in on the 7th.

Vacuum sealing is a good way to go, especially if you are seasoning foods and need to repackage them.

We use the Egg Beaters type boxed eggs for cooking in recipes, and real eggs for scrambled or fried eggs. You can carry them in a cooler or in a dry box. I wrap the carton of eggs in bubble wrap to prevent breakage, then put the carton in a zip lock. I don't pre-break the eggs & put them in another container.....time consuming & not necessary in my opinion.
For dry goods (brownie mix, pancake mix, etc.) Remove the product from it's outer packaging, save the cooking instructions, put in zip lock bags. This reduces excess packaging & trash on the river.
Pre-cook as much as possible & freeze (pasta sauces, ground beef, etc.). If you have access to a vacuum sealer use it, if not, the zip lock vacuum bags work great.
Good cooler & dry box organization really helps. Make a menu list for each meal, and organize stuff according to meals. This eliminates excess opening of coolers & pointless rummaging in dry boxes.

As a pro Chef who works mostly outdoors I gotta ask. How do you crack eggs into a soda bottle? Why?
My tip on this is- Crack them into zip-locks with season and onions,peppers etc... Then you can put them directly into boiling water and cook em'
On a food safety point- You need to cook cracked eggs within' 24 hours.
Once the lystic acid in the yolks get to oxygen they start to grow enzymes.

One thing I like to do is find a nice cardboard box big enough for my tortillas. Put those in the bottom so they stay nice and flat and then stack bread vertically on top. Four or six loaves depending on the bread. This is in my dry box. Helps the bread and torts survive.

I cut the top off the box for easy access and make the sides just a little higher than the bread - so no crush.

I tap cardboard into my drybox to make compartments sized for the contents for that trip. It sure makes it nice to get a stove in and out, and not have everything collapse and fill the space
