I think the thing that holds us back from DO cooking on non-layover days is dealing with the hot coals/ashes/firepan. Otherwise we'd be baking cinnamon rolls every morning. Lots of good breakfast ideas on this thread.
Hi cataraftgirl, our bf meal was a frittatas style meal. Sauté chopped onions, minced garlic and hot Italian sausage, stir in assorted bell peppers and hash browns. Cook until tender over med/high stove top. Add beaten eggs (or egg beaters) evenly over ingredients, cover and bake until eggs are firm (about 30 minutes or so), remove lid add cheese, cover and cook for 5 minutes, serve and enjoy. If you want exact recipe I can forward it based on 6 servings.
