What will be the best class IV runs around Memorial Day?

I'm an open boater from TN and will be in the area over memorial day and I will have 2 days to boat.

I will be back at 4th of july so I would like to hit something that won't be running on the 4th and something I've never run before.

Last year the toughest runs I got on were the Encampment, lower fish creek, and spencer heights. I wouldn't want to run anything any harder than this and I would appreciate some suggestions on other runs.
