Two words on the DO - Anodized Aluminum.
Its about 1/4 the weight of cast iron and cleans up easier, you don't have to worry about seasoning it, and it works just as well. Its worth the $$ if you aren't into weightlifting every time you use a DO.
Avoid the temptation to do elaborate meals. Prepare as much as possible ahead and package each meal so its all in one place, get a seal-a-meal at Target (don't use it for breads or tortillas though). Make a list of which meals are in each cooler/drybox.
Sooner or later, EVERYTHING will take a swim in the cooler bottom swill so get lots of Ziploc bags. Simple is beautiful and you've got lots better things to do in the canyon than chop vegetables. Get Pringles and flatbreads (pitas) for as many meals as you can since keeping chips and loaves of bread from getting squashed is a hassle (imagine having to protect an egg from getting broken all day long).
