I wouldn't worry about the Jefe being "top heavy". It's a little harder to roll than the Habitat and with less primary stability, but you can make the transition quickly and it makes up in other areas. If you look at the length & volume of the Habitat, the regular Jefe has almost the same specs. I've also paddled the Nomad 8.5, which I liked quite a bit, and am 10-15lbs lighter than you. I think both boats track straighter than the Habitat. The Nomad will track super straight but takes a little more muscle to turn. The Jefe is more balanced.
Of course there's a whole host of usual suspects for other boats to try, that I'm sure are all good, but those 3 are the ones I have experience with.
