Go to Gina's restaurant and ask for Vicente. He was inexpensive, honest and knowledgable.
Also, there is a hotel right around the corner from Gina's, which seemed to be the best place to eat in Baeza. The hotel (can't think of the name) (we just asked at the restaurant) was clean, pretty cheap and had good views.
If you go make sure you have some of the Ron del Rio rum.
